Take a few cloves of garlic, peel them, and slice them into thin pieces. Peel and slice 20g of ginger as well. Now, let’s move on to preparing the broccoli. Add 1 tablespoon of shaoxin wine and 1 tablespoon of oyster sauce. Incorporate the abalone sauce, along with 400ml of water. Let the mixture simmer on low heat for 20 minutes. Then, add 2 tablespoons of light soy sauce and the fried garlic. Toss in the carrots and broccoli stem, followed by the fish maw. If the dish seems dry, feel free to add more water, as fish maw tends to absorb the sauce.

Allow the ingredients to stew for an additional 2 to 3 minutes before adding the abalone. Cook on low heat for another 2 minutes. Taste the dish and adjust the seasoning with salt, light soy sauce, and a sprinkle of white pepper.
