Who doesn’t love a deliciously moist and flavorful strawberry cake? It’s a classic dessert that never fails to brighten up any occasion. However, finding the perfect strawberry cake recipe can be a bit tricky. Some lack that authentic strawberry flavor, while others taste overly artificial. But fear not, because today we’re going to learn how to make the ultimate strawberry cake that combines the best of both worlds!

Creating the Strawberry Filling

To achieve that mouthwatering burst of strawberry flavor, we’ll start by making a strawberry filling. Grab 600 grams of fresh strawberries, hulled and sliced in half. In a large fry pan, combine the strawberries with 150 grams of white granulated sugar, 1 tablespoon of lemon zest (from one lemon), and 60 grams (¼ cup) of freshly squeezed lemon juice.

Place the pan over medium heat and let the mixture cook for about 10 minutes until the strawberries become nice and soft. Then, mash the strawberries with a potato masher to break them down further. You’ll notice some liquid in the mixture, which is the water released by the strawberries. Let it reduce for another 10 minutes to intensify the strawberry flavor.

To thicken the mixture, mix together 22 grams (3 tablespoons) of cornstarch with 2 tablespoons of water until smooth. Pour this into the strawberry mixture and let it reduce for a few more minutes until you achieve a thick consistency. Once cooled, you’ll have about two cups of delicious strawberry filling ready to be used in your cake.

Baking the Strawberry Cake

Now that our strawberry filling is prepared, let’s move on to making the cake layers. Preheat your oven to 160°C (320°F) with the fan on and grease or line two eight-inch cake pans. In a bowl, sift together 300 grams of all-purpose flour, 25 grams of cornstarch, 2½ teaspoons of baking powder, and half a teaspoon of salt.

In a separate bowl, combine 195 grams (¾ cup) of the strawberry filling, 60 grams (¼ cup) of room temperature milk, and a small drop of red gel food coloring (optional). Mix until well combined. In a large bowl, cream together 113 grams (½ cup) of room temperature unsalted butter, 105 grams (½ cup) of canola oil, and 300 grams (1½ cups) of white granulated sugar using a hand or stand mixer on medium speed for three minutes until light and fluffy.

Add 225 grams of egg whites in three batches, mixing well after each addition. This is because using only egg whites helps achieve a beautiful strawberry color and allows the strawberry flavor to shine through. Next, add half of the strawberry milk mixture, three teaspoons of strawberry essence, 1½ teaspoons of vanilla extract, and one teaspoon of white vinegar. Mix until well combined.

Fold in the dry ingredients in two batches, being careful not to overmix. If needed, add a little extra red gel food coloring for a vibrant color. Divide the batter evenly between the prepared cake pans and bake for approximately 35 minutes, or until a toothpick inserted into the center comes out clean.

Irresistible Strawberry Cream Cheese Frosting

While the cake layers cool, let’s make the delectable strawberry cream cheese frosting. Start by creaming together 225 grams (1 cup) of room temperature unsalted butter until light and fluffy. Add 570 grams (4½ cups) of icing sugar in three batches, mixing on low speed to prevent sugar from flying everywhere.

Once the icing sugar is fully incorporated, add 335 grams (1½ cups) of cold cream cheese, one teaspoon of vanilla extract, two teaspoons of strawberry extract, and 65 grams (¼ cup) of the strawberry filling we made earlier. Mix until well combined and smooth. Add a touch of red gel food coloring if desired for a brighter frosting.

Assembling the Perfect Strawberry Cake

Now that everything is ready, it’s time to assemble our delicious strawberry cake. Trim off any brown edges from the cake layers for a clean look. Place one cake layer on a cake stand and generously spread a layer of frosting on top. Add a dam of frosting around the edges to hold the remaining strawberry filling as the filling for the cake.

Carefully spread the strawberry filling inside the dam, followed by the second cake layer. Frost the top and sides of the cake with the remaining cream cheese frosting, using a cake scraper to achieve smooth edges. For a beautiful finishing touch, pipe some additional frosting around the top edges and garnish with fresh strawberries.
