Brown Butter for Extra Flavor

To elevate the flavor of our cookies, we’re going to start by browning our butter. Browning the butter toasts up the milk solids and adds a depth of flavor that you’ll notice in every bite. Quality ingredients make a difference, so I highly recommend using pure Irish butter, like the one from Kerrygold.

To brown the butter, melt half a cup of unsalted butter in a pan over medium-low heat. Watch it closely as it turns into a beautiful golden hue. Once it’s browned, transfer it to a mixing bowl and let it cool for about five minutes.

The Perfect Texture

For the perfect chocolate chip cookie with a crispy outside and a warm, soft, chewy inside, we’ll be using a combination of white sugar and brown sugar. The white sugar adds a delicate crispness, while the brown sugar with its molasses content provides that extra chewiness we all love.

Mix the sugars with the browned butter until they are nice and fluffy. Add in one room temperature egg and mix it again until the batter has a lava-like consistency. Then, add in vanilla extract, salt, and baking soda, mixing thoroughly before adding in the flour and chocolate chips.

Baking the Cookies
